Boston Cream Pie Bars (No Bake)
Ingredients
Crust
6 ounces vanilla wafer cookies (about 50)
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
Filling
2 boxes vanilla instant pudding mix (3.4-ounce)
2 1/2 cups cold heavy cream
1/2 c water
2 t vanilla
Ganache
6 ounces chopped semi-sweet chocolate, or 1 cup semi-sweet chocolate chips
2/3 cup cold heavy cream
Directions

Process vanilla wafer cookies and granulated sugar in a food processor.

Drizzle in melted unsalted butter and pulse until evenly moistened.

Transfer to a baking pan, press into an even layer, and freeze to set.

Combine vanilla instant pudding mix, cold heavy cream, water and vanilla together in a large bowl until smooth; it will be very thick.

Spread evenly over the crust, then refrigerate until ganache is ready.

Place chopped semi-sweet chocolate in a medium bowl.

Bring heavy cream to a simmer in a saucepan over medium heat.

Pour over the chocolate and let it sit for a minute or two.

Whisk until the chocolate is melted and the ganache is smooth.

Pour the ganache over the custard in an even layer.

Refrigerate until set.
