Boston Cream Pie Bars (No Bake)

Ingredients

Crust
  • 6 ounces vanilla wafer cookies (about 50)
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • Filling
  • 2 boxes vanilla instant pudding mix (3.4-ounce)
  • 2 1/2 cups cold heavy cream
  • 1/2 c water
  • 2 t vanilla
  • Ganache
  • 6 ounces chopped semi-sweet chocolate, or 1 cup semi-sweet chocolate chips
  • 2/3 cup cold heavy cream
  • Directions

    1. Process vanilla wafer cookies and granulated sugar in a food processor.
    2. Drizzle in melted unsalted butter and pulse until evenly moistened.
    3. Transfer to a baking pan, press into an even layer, and freeze to set.
    4. Combine vanilla instant pudding mix, cold heavy cream, water and vanilla together in a large bowl until smooth; it will be very thick.
    5. Spread evenly over the crust, then refrigerate until ganache is ready.
    6. Place chopped semi-sweet chocolate in a medium bowl.
    7. Bring heavy cream to a simmer in a saucepan over medium heat.
    8. Pour over the chocolate and let it sit for a minute or two.
    9. Whisk until the chocolate is melted and the ganache is smooth.
    10. Pour the ganache over the custard in an even layer.
    11. Refrigerate until set.
